- First rise. Cover, 1 hour until doubled.
- Pearl sugar fold. Add sugar. Knead briefly to distribute. Some breaking OK.
- Divide + rest. 8 balls. Cover, rest 30 min.
- Cook on high heat. 3-4 min per ball in deep-pocket waffle iron until deeply golden.
- Cool 2 min. Sugar is lava hot fresh out. Eat hand-held.
