⚠ Three Fatal Errors

Making It
- Brown butter. Medium heat, stir constantly. Milk solids golden + nutty smell, 4-5 min. Stop just before burn.
- Cool 20 min. Pour into mixing bowl. Room temperature is essential.
- Whisk dry. Flour, baking soda, salt.
- Mix sugars + butter. Both sugars into cooled brown butter. Whisk 1 min.
- Add eggs + vanilla. Whisk to combine.
- Fold dry + chocolate. Flour mixture, then chunks. Don’t overmix.
- REFRIGERATE 24h. Non-negotiable.
- Preheat 190 C (375 F). Scoop 2 tbsp portions on parchment sheets.
- Bake 11-13 min. Edges set, centers still soft. Flaky salt sprinkle.
